Hi everyone! I hope you are all having a safe and happy 2012! I can’t believe it’s already here. 2011 was kind of a blurr with school and blogging, so I’m definitely excited to see what this new year has for us!
Resolutions?
Part of my plan is to start back up on weight watchers. This menu isn’t totally weight watchers friendly, but I will update it as I go replacing some of the menu items to fit a little better, so you can expect that change in February.
So for now, here’s my January 2012 Monthly Meal Plan for you!

Hope the meal plan helps alleviate some of your stress!
Here’s to a wonderful 2012!!
Happy New Year’s Erica. Thank you for all of your advise and help this year. I’m looking forward to seeing the changes in your menu! I love healthy recipes! Blessings to you and yours!
I love the menu~ I am planning on doing the same thing ( heading back to WW) and was wondering what recipe you use for your smoothies~ 🙂 can you share? Look forward also to seeing any changes your making as well~
Hi Tracey,
I either use the pre-made yoplait or Jamba Juice smoothies (just add milk or juice), or I make my own using frozen fruit (Strawberry, blueberry, mango, etc) whatever i can find on sale plus a few chunks of frozen yogurt and milk. I add about 2 cups of milk and 2 cups frozen fruit and blend.
I did go back just before Christmas and the idea of following along with other Homeschool Moms is a thrill. It can be stressful trying to plan new menus and homeschool and chauffeur through the week, but I love it all the same!
Have a wonderful New Year God Bless!
I love your blog and seeing what you are getting up to with your children, so am passing on to you the Versatile Blogger award. For rules please see http://educatingiona.blogspot.com/2012/01/versatile-blogger-award.html. Happy New Year.
Hi Erica, do you have a smoothie recipe you can share? I would love to try one with my kids. 🙂
Thanks so much for posting an editable version. So very thoughtful. Now I can change slightly to fit my family’s needs and this cuts down on my meal-planning work by about 95%! Thank you! Thank you! Thank you! You are awesome!
Going to be doing Weight Watchers as well. Looking forward to your recipes!
Happy New Year!
Caterina
Hi Erica, Thank you for all of the wonderful things you provide for other homeschoolers like me!
I am going to start using your Monthly Meal plans (a New Year’s Resolution from LAST year). I’m glad that I will be able to edit them when needed to fit my family’s needs.
I am interested in using the same format for planning our monthly homeschool schedule, field trips, and other activities including hyperlinks to websites, lesson plans, etc, and was wondering if this was a template you found in Word or something that you created from scratch? Do you have a link to a template or tutorial on how to create an editable calendar that accepts hyperlinks?
Thank you again for sharing your talents and passion for homeschooling with other Moms,
Andrea
Hi Andrea,
I just created a table in word, nothing fancy! I added in links wherever i had a recipe to share on my blog. I’m sure you could just delete out the recipe info on it and add in your lessons!
Thanks, Erica! That’s exactly what I’ll do! Thanks for saving me so much time!
Hey Erica, I just wanted to tell you how helpful your blog is! I’m a devout follower, mommy of almost 3 year old identical twin girls, and fellow blogger (just ventured out on my own, but I’ve been blogging for What to Expect for a while now: http://www.whattoexpect.com/blogs/twinsamothersjoyandinsanitydoubled). I don’t know how you find enough hours in the day to do all you do, but I can’t thank you enough!
Hi Miss Erica! I just want to know how do you organize your time regarding PLANNING/and PREPPING for all this stuff? I know this all takes a lot of thought and preparation but I wouldnt know how to fit it all in to my regular day! Please share!
