I wanted to share a new recipe with everyone now that it’s starting to get colder out! This recipe is so yummy even the kids devour it! A fellow homeschooling mom shared this recipe with me a few years ago and we’ve made it ever since! It’s called “Hot Taco Soup”  and if you like tacos and you like soup/chili, then you’ll absolutely LOVE this!

Ingredients:

  • 1 1/2 lbs extra lean ground beef
  • 1 med Onion, chopped
  • 2 sticks celery, chopped (I omit this)
  • 1 – 17oz can diced tomatoes with juice
  • 2 – 14oz cans kidney beans (or your favorite kind)
  • 1 – 8oz package frozen corn (or canned w/juice)
  • 1 package Taco Seasoning
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 cup chicken broth
  • Optional Garnish: shredded cheddar cheese, diced avocado, sour cream, sliced green onion, Fritos (YES, I said Fritos! We crunch them up and toss ‘em in the soup! YUM!)

Directions:

In large stockpot, brown ground beef, onion and celery. Drain grease, add tomatoes & all but garnish. Simmer for at least 30 minutes.

Serve in individual bowls and garnish as desired!

Make your own Taco Seasoning!

  • 1 T chili powder
  • 1/4 t garlic powder
  • 1/4 t onion powder
  • 1/4 t crushed red pepper flakes
  • 1/4 t oregano
  • 1/2 t paprika
  • 1 1/2 t cumin
  • 1 t salt
  • 1 t black pepper

  1. Made this a little while back after seeing your post. Everyone loved it! Thanks for sharing the recipe. Sometimes we overlook the easy delicious stuff for the showy recipes, but with things like this you can never go wrong. 😀

  2. Oh, I’m definitely adding this to our meal plan for next month! I would have to omit the celery since my hubby won’t go near it if there’s even a hint of it in there. Thanks for the recipe! 🙂

  3. This is an absolute staple in our house. We are total vegetarian so we just omit the hamburger, switch for vegetable broth and pile the green onion high! We also like to crush tortilla chips a small amount at a time for some crunch! This is absolutely delicious and we enjoy it at least 2-3 times a month! Thank you so much for sharing!

  4. This soup was amazing! It is good with out any fixings but my stubborn eater in the family insisted on putting lettuce and cheese in her, and without a doubt makes this soup a must eat! My family doesn’t due leftovers but with this meal they wanted more!! Thank you so much for sharing!

  5. I’ve been making this for years since coming across your post (I’ve shared it many times too). My entire family loves it and I even make it for meal train meals as well. I am attempting to recreate it as a low sodium option since my 14 yo just got put on a low sodium diet and thinks she is going to be “malnourished”. If this is a success, it will show her that we can do this by modifying our favorite recipes! Basically I am making my own taco seasoning with a very minute amount of salt, I am soaking and cooking dried beans, low sodium canned tomatoes, frozen corn, low sodium chicken broth, and Lightly salted Fritos (bc you really cant eat this without Fritos!!)
