Ingredients:
- 2 eggs, beaten
- 1 3/4 cup skim milk
- 1/4 cup canola oil
- 1/4 cup unsweetened apple sauce (I used cinnamon apple sauce)
- 1 tsp vanilla extract
- 2 C whole wheat flour (Can substitute: 1 c whole wheat flour, 1/2 c flax seed, 1/4 c wheat germ, 1/4 c all purpose flour)
- 4 tsp baking powder
- 1 Tbsp sugar
- 1/4 tsp salt
- Optional: 1/4 c white chocolate chips ;o)
Directions:
I have a Toastmaster Belgian Waffle Baker but its old, so I’m sure they have newer fancier ones now!
Step 1: Preheat waffle iron. In large bowl whisk together eggs, milk, oil, apple sauce, vanilla.
Step 2: Stir in remaining dry ingredients until batter is smooth. (You may have to add a little extra flour if its too runny, I didn’t measure that well!)
Step 3: Pour batter into waffle iron and cook until golden! (Spray waffle iron if it’s not non-stick)
Step 4: Serve with favorite fresh fruit and Agave Nectar (See below)
Makes about 14 waffles
I use Agave Nectar from Mudhava instead of syrup. Agave is a natural liquid sweetener made from the extract of the wild agave. It can be pricey, so I buy bulk and just refill the little container!

And just like the nice folks at “Kellogg’s Eggo” you can freeze these bad boys and reheat in a toaster!

Oh I cannot wait to try this! We have yet to purchase agave and I am glad you included your tip on purchasing in bulk! We love using whole wheat and our favorite flour for sure is Kamut! I cannot wait to try these 🙂

Basically the article states that agave nectar is worse than high fructose corn syrup. Dr. Mercola is a very well known doctor so i feel it is probably trusted information. I found this recipe on your site a while back, but wanted to say that it’s the only waffle recipe we use now! I never was a fan of waffles cause they are usually so sweet and cakey (I don’t like that in the morning – I know, I’m odd). THese are the perfect balance of sweet-cakiness for the waffle lovers in my family and lighter, healthier tasting for me. THey stick with syrup or fruit yogurt for dipping, I go with heated (previously frozen) mixed berries on mine. Yum! Thanks!!
