For our Expedition Earth week on Venezuela, we tried a sweet treat from the Another Trip Around the World book called Quesillo (Little Cheesecake). It’s really more like a flan than a cheesecake, and it might help to know that before you start so you’re not surprised by the result. Are you ready?

Ingredients:

  • 1/4 c. sugar
  • 1/8 c. water
  • 4 eggs
  • 1 can evaporated milk
  • 1 can sweetened, condensed milk
  • 1 tsp. vanilla

Step 1: Preheat oven to 350 degrees. In 8×8 baking dish add sugar and water. Place pan in oven until boiling. Do not brown! Tilt the pan to coat.

Step 2: Next add remaining ingredients to blender and mix until smooth.

Step 3: Pour blended mixture into caramelized pan and bake for 1 hour at 350 degrees, or until top crust is browned.

Step 4: Don’t panic if it looks like this. The sugar layer on the bottom will rise to the top creating a crystalized crust on top.

Step 5: Let cool slightly then serve warm.

What did we think? It tasted good, creamy with the crunchy top layer. Everyone except our preschooler liked it.

  1. Actually, you are supposed to let it cool, then chill it in the fridge for 3-4 hours before serving. To serve, you invert it onto a serving dish. I think you will find it very delicious this way. I grew up in Venezuela and that is how everyone I knew ate it. I found a link to the recipe for you. This is fancier than my Mom made it. I am making it tonight, but hers is a smaller version that requires 4 eggs and a small can of sweetened condensed milk, so I was online checking to see how many ounces that is.
