Happy almost-July friends! I feel like I went to sleep and woke up and June was over. I can’t believe it’s already time for a new monthly meal plan! It went from snowing to like 99 degrees in one day here. If you don’t believe me, head over to my Instagram and you’ll see the crazy Colorado weather in action! I think I have weather whip-lash from living here LOL!
That said, we’re definitely in summer mode here now. The days are hot and we’ve been mostly doing all things summer like BBQs, swimming, golfing, lemonade drinking and Popsicle eating!
I do my best not to fire up the oven during these hot days, and so we’ve also been doing a lot of grilling along with munching on fruits and salads. I actually look forward to the fresh lighter foods of summer time. Plus it means less time in the kitchen for me so…win win!

- If you haven’t already used this before, you can click on any of the underlined menu items to get to the recipe.
- I like to shop once a week, so I just make a list off of my menu plan and head to the store. I find that I spend less when I shop off of a list, then flying by the seat of my pants. I also end up with ingredients that will actually go together instead of a bunch of random items that don’t amount to anything.

You take a tortilla and then put meat, mayo, etc. sandwich stuff, etc. Then roll it up and slice it into about 1″ slices that look like a “wheel” 🙂
